Title : Seasonality Calendar of Unconventional or Neglected Vegetables

Abstract

With a huge variety of edible plants, native or exotic, Brazil has its biodiversity underexploited in food. Objective: This study aims to develop a Seasonality Calendar in order to contribute to the knowledge, use and preservation of these species that make up Brazil’s biodiversity. Methods: Systematization of information, through scientific literature review, about unconventional or neglected vegetables, classifying them according to the parts used in human nutrition, such as fruits, fruit vegetables, herbaceous vegetables and seeds. Results: The calendar includes 71 species, classified into 60 native and 11 exotics, subdivided into 59 fruits, 3 vegetables, 13 herbaceous vegetables and 6 seeds. Conclusions: It is important to have more studies focused on this topic as is notorious due to relevance of the theme and scarcity of works that present tools easy to apply, that provide the unconventional or neglected vegetable adoption in cooking and gastronomy. Therefore, expects the population and specially planning menus professional to use this knowledge aiming the food culture valorize and the Brazilian biodiversity conservation.

Biography

Thadia Turon has a degree in nutrition for 22 years and completed her doctorate in science and food technology at the Federal Rural University of Rio de Janeiro in 2013. She is professor at the nutrition and dietetics department at the Josué de Castro Nutrition Institute at the Federal University of Rio de Janeiro, with published articles on organic food, biodiversity, healthy and sustainable food.
