Title: Development of bakery products with ragi to address life style diseases: A holistic approach
The burden of lifestyle diseases is increasing consistently around the globe. Sedentary lifestyle, unhealthy food habits, irregular sleep, alcohol, substance use disorders, smoking, stress, and anxiety at the workplace, etc. are the predominant factors for the occurrence of lifestyle or Non Communicable diseases(NCD) like diabetes, atherosclerosis, coronary artery diseases, stroke, obesity, hypertension, cancer, etc. Around 41 million people are dying each year which is equivalent to 71% of all global deaths because of NCD. In particular, about 1 in 4 Indians is susceptible to death due to NCD before the age of 70 every year. Nutritious foods are the best substitute to overcome the NCD.. However, industrialization, westernization, women's employment, and change in office clock people are major obstacles to nutritious food preparation. Therefore, the preparation of nutritious ready- to- eat foods is highly challenging at present. With this back drop , the present talk will elaborate the development of low- calorie, low -glycemic index(GI), low- cost healthy bakery products with ragi as the major constituent to meet the daily needs of the people. Ragi has been selected because it is affluent in calcium, iron, antioxidants and photochemical having lots of health benefits. The preparatory methods, level of acceptability, and health benefits of the products will be discussed. Overall, the holistic approach adopted for the development of low-calorie low-GI bakery products would certainly bring a revolutionary change in the field of controlling Life Style Diseases.
Dr. Chandrashree Lenka is presently working as Head of the Department of P.G.Department of Home Science,Sambalpur University,Odisha ,India. She has 70 research publications in different International and national journals, and write 17 books to her credit. She is also guiding research scholars for their Doctoral Degree. She is recipient of different awards such as K.G.Naidu Medical Trust Award , Kumudini Smruti Puraskar, Dr.A.P.J. Abdul Kalam Education Excellence Award etc. She has also been granted with an Indian patent on Millet. She is deeply involved in the field of teaching and research since 31 years.
